Ingredients
1 cup rolled oats
1/2 cup all-purpose flour
2 tsp baking powder
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp salt
1 large egg
3/4 cup milk (dairy or non-dairy)
2 tbsp maple syrup or brown sugar
1 tsp vanilla extract
1 small apple, peeled and finely diced
1 tbsp butter or oil (for cooking)
Instructions
1. In a large bowl, whisk together oats, flour, baking powder, cinnamon, nutmeg, and salt.
2. In another bowl, combine egg, milk, maple syrup, and vanilla. Stir in diced apples.
3. Pour the wet ingredients into the dry ingredients and mix until just combined. Let sit for 5–10 minutes to thicken.
4. Heat a skillet over medium heat and grease with butter or oil.
5. Scoop 1/4 cup of batter per pancake into the skillet. Cook for 2–3 minutes per side, or until golden brown and cooked through.
6. Serve warm with maple syrup and toppings of choice.
