Avocado toast just got a glow-up. This version features creamy mash, a perfectly jammy egg, and bold toppings that hit all the right notes.


Ingredients

  • 1 slice of whole grain or sourdough bread
  • ½ ripe avocado
  • 1 soft-boiled or poached egg
  • A pinch of red pepper flakes
  • Salt and cracked black pepper
  • Optional: Everything Bagel seasoning
  • Optional: Feta crumbles

Instructions

  1. Toast the bread until golden and slightly crisp on the edges.
  2. Mash the avocado with a squeeze of lemon juice and a pinch of salt.
  3. Bring a small pot of water to a boil, gently add the egg, and cook for 6 minutes. Transfer immediately to an ice bath. Peel once cooled.
  4. Spread the mashed avocado onto the toast, place the egg on top (sliced or whole), and sprinkle with red pepper flakes, salt, black pepper, and any optional toppings.
  5. Enjoy immediately before the toast gets soggy.
