- 1 slice of whole grain or sourdough bread
- ½ ripe avocado
- 1 soft-boiled or poached egg
- A pinch of red pepper flakes
- Salt and cracked black pepper
- Optional: Everything Bagel seasoning
- Optional: Feta crumbles
Instructions
- Toast the bread until golden and slightly crisp on the edges.
- Mash the avocado with a squeeze of lemon juice and a pinch of salt.
- Bring a small pot of water to a boil, gently add the egg, and cook for 6 minutes. Transfer immediately to an ice bath. Peel once cooled.
- Spread the mashed avocado onto the toast, place the egg on top (sliced or whole), and sprinkle with red pepper flakes, salt, black pepper, and any optional toppings.
- Enjoy immediately before the toast gets soggy.
