- 3 tbsp butter (unsalted preferred)
- 1 large yellow onion, diced
- 2 cloves garlic, minced (or 1/2 tsp garlic powder)
- 2 lbs russet potatoes, peeled and cubed
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 tsp salt, plus more to taste
- 1/2 tsp black pepper
- Optional toppings: shredded cheddar, chives, bacon bits, sour cream
Instructions
- In a large pot, melt butter over medium heat.
- Add diced onion and cook until soft, about 5–7 minutes.
- Stir in garlic and cook for 1 minute more.
- Add cubed potatoes and broth; bring to a boil.
- Reduce heat, cover, and simmer for 15–20 minutes until potatoes are fork-tender.
- Use an immersion blender to puree the soup to desired consistency (or blend in batches).
- Stir in heavy cream, salt, and pepper.
- Simmer 5 more minutes, taste and adjust seasoning if needed.
- Serve hot with your choice of toppings.
Notes
For extra richness, stir in a handful of shredded cheese directly into the soup before serving.
