  • 1 large yellow onion, diced
  • 2 cloves garlic, minced (or 1/2 tsp garlic powder)
  • 2 lbs russet potatoes, peeled and cubed
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 tsp salt, plus more to taste
  • 1/2 tsp black pepper
  • Optional toppings: shredded cheddar, chives, bacon bits, sour cream

Instructions

  1. In a large pot, melt butter over medium heat.
  2. Add diced onion and cook until soft, about 5–7 minutes.
  3. Stir in garlic and cook for 1 minute more.
  4. Add cubed potatoes and broth; bring to a boil.
  5. Reduce heat, cover, and simmer for 15–20 minutes until potatoes are fork-tender.
  6. Use an immersion blender to puree the soup to desired consistency (or blend in batches).
  7. Stir in heavy cream, salt, and pepper.
  8. Simmer 5 more minutes, taste and adjust seasoning if needed.
  9. Serve hot with your choice of toppings.

Notes
