Ingredients

  • 2 medium zucchinis, sliced into 1/4-inch rounds
  • 2 tablespoons olive oil
  • 1/2 cup freshly grated parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • Optional: chopped parsley or lemon zest for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or lightly grease it.
  3. In a large bowl, toss zucchini slices with olive oil.
  4. In a small bowl, mix parmesan, garlic powder, Italian seasoning, salt, and pepper.
  5. Press each zucchini slice into the parmesan mixture, coating both sides.
  6. Arrange the slices in a single layer on the prepared baking sheet.
  7. Bake for 20-25 minutes or until golden brown and crisp on the edges.
  8. Garnish with parsley or lemon zest if desired and serve immediately.
