- 2 medium zucchinis, sliced into 1/4-inch rounds
- 2 tablespoons olive oil
- 1/2 cup freshly grated parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon sea salt
- 1/4 teaspoon black pepper
- Optional: chopped parsley or lemon zest for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with parchment paper or lightly grease it.
- In a large bowl, toss zucchini slices with olive oil.
- In a small bowl, mix parmesan, garlic powder, Italian seasoning, salt, and pepper.
- Press each zucchini slice into the parmesan mixture, coating both sides.
- Arrange the slices in a single layer on the prepared baking sheet.
- Bake for 20-25 minutes or until golden brown and crisp on the edges.
- Garnish with parsley or lemon zest if desired and serve immediately.
