- 1 package kielbasa (14 oz), sliced into rounds
- 1.5 lbs baby potatoes, halved
- 2 large green bell peppers, sliced
- ½ large sweet onion, diced
- 3 cloves garlic, minced
- 1 can diced tomatoes (15 oz), undrained
- 1 cup beef broth (or 1 cup water + 1 beef bouillon cube)
- 1 teaspoon dried parsley
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- Slice kielbasa into rounds and add to the slow cooker.
- Halve baby potatoes and add them in.
- Add sliced green bell peppers, diced sweet onion, and minced garlic.
- Pour in the undrained can of diced tomatoes and the beef broth.
- Sprinkle in the parsley, thyme, garlic powder, salt, and black pepper.
- Stir everything gently to combine.
- Cover and cook on Low for 6-8 hours or on High for 3-4 hours, until potatoes are tender.
- Serve hot and enjoy!
Notes
You can substitute kielbasa with smoked sausage or add red bell peppers for extra color and sweetness.
