  • 1 package kielbasa (14 oz), sliced into rounds
  • 1.5 lbs baby potatoes, halved
  • 2 large green bell peppers, sliced
  • ½ large sweet onion, diced
  • 3 cloves garlic, minced
  • 1 can diced tomatoes (15 oz), undrained
  • 1 cup beef broth (or 1 cup water + 1 beef bouillon cube)
  • 1 teaspoon dried parsley
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Slice kielbasa into rounds and add to the slow cooker.
  2. Halve baby potatoes and add them in.
  3. Add sliced green bell peppers, diced sweet onion, and minced garlic.
  4. Pour in the undrained can of diced tomatoes and the beef broth.
  5. Sprinkle in the parsley, thyme, garlic powder, salt, and black pepper.
  6. Stir everything gently to combine.
  7. Cover and cook on Low for 6-8 hours or on High for 3-4 hours, until potatoes are tender.
  8. Serve hot and enjoy!

Notes

You can substitute kielbasa with smoked sausage or add red bell peppers for extra color and sweetness.
