Description

Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 cups cooked shredded chicken
  • 2 cans (15 oz) white beans, drained
  • 2 cans (4 oz) diced green chiles
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ tsp oregano
  • ½ cup sour cream
  • 1 cup shredded Monterey Jack cheese
  • Salt & pepper to taste

Instructions

  1. Heat olive oil in a large pot. Add onion and garlic, sauté until fragrant.
  2. Add shredded chicken, beans, green chiles, broth, and spices. Simmer for 20 minutes.
  3. Stir in sour cream and cheese until creamy.
  4. Serve hot with tortilla chips, avocado, or jalapeños.

Notes

Can be made in a slow cooker. Freeze for up to 3 months. Mildly spiced but customizable with jalapeños or hot sauce.
