Ingredients

  • 2 large boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon lemon juice
  • Optional: ½ teaspoon cayenne for spice

Instructions

  1. Pat the chicken dry and slice each breast in half horizontally to make 4 thinner cutlets. Season with salt, pepper, paprika, garlic powder, and cayenne if using.
  2. Heat olive oil in a large skillet over medium-high heat until hot.
  3. Add chicken and cook 4–5 minutes per side until golden brown and cooked through.
  4. Reduce heat to low, add butter and let it melt.
  5. Stir in lemon juice and parsley, then spoon the butter sauce over the chicken.
  6. Serve with rice, roasted veggies, or bread to soak up the sauce.
