Description

A healthy and flavorful ground chicken & broccoli stir fry packed with mushrooms and a savory sauce. Perfect for a quick weeknight meal.


Ingredients

  • 1 pound ground chicken
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive or avocado oil
  • 8 ounces sliced mushrooms (baby portobello work great!)
  • 4 cups broccoli florets
  • ¼ cup water
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup coconut aminos or low sodium soy sauce
  • ⅓ cup water
  • 1 tablespoon rice vinegar
  • 2 teaspoons sesame oil
  • 2 teaspoons garlic, minced
  • ½ teaspoon chili powder
  • ½ teaspoon ground ginger
  • 2 teaspoons arrowroot flour (or cornstarch)

Instructions

  1. Heat a large skillet over medium heat and add ground chicken, salt, and pepper. Cook until browned, breaking it apart as it cooks.
  2. Remove the chicken from the skillet and set aside.
  3. Add olive or avocado oil to the same skillet, then add sliced mushrooms. Cook for 3–4 minutes until softened.
  4. Add broccoli florets and water, cover and steam for 2–3 minutes until tender-crisp.
  5. Season the vegetables with salt and pepper.
  6. In a small bowl, whisk together coconut aminos, water, rice vinegar, sesame oil, garlic, chili powder, ground ginger, and arrowroot flour.
  7. Return the chicken to the skillet and pour in the sauce. Stir everything together well.
  8. Cook for 2–3 more minutes until the sauce thickens and evenly coats the chicken and veggies.
  9. Serve hot over rice or your favorite grain if desired.

Notes

Use fresh broccoli for the best texture. Adjust chili powder based on spice preference.
