- 3/4 cup almond butter (or any natural nut butter you’ve got hanging out in your pantry)
- 3/4 cup canned pumpkin puree
- 2 eggs
- 1/2 cup maple syrup or honey
- 1 tsp vanilla extract
- 1/2 cup cocoa powder
- 1/2 tsp baking soda
- Pinch of salt
- 1/2 cup chocolate chips (plus a few extra for sprinkling on top—because more chocolate is never a bad idea)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine almond butter and pumpkin puree until smooth.
- Add eggs, maple syrup (or honey), and vanilla extract; mix well.
- Sift in cocoa powder, baking soda, and salt; stir until just combined.
- Fold in chocolate chips.
- Pour batter into a lined or greased baking pan.
- Sprinkle extra chocolate chips on top.
- Bake for 20-25 minutes or until a toothpick comes out mostly clean.
- Allow to cool before slicing and serving.
Notes
Use natural nut butter without added sugar for the healthiest option. These brownies keep well refrigerated for up to 5 days.
