Delicious and healthy pumpkin brownies made with almond butter and rich cocoa — perfect for a guilt-free treat.


Ingredients

  • 3/4 cup almond butter (or any natural nut butter you’ve got hanging out in your pantry)
  • 3/4 cup canned pumpkin puree
  • 2 eggs
  • 1/2 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1/2 cup cocoa powder
  • 1/2 tsp baking soda
  • Pinch of salt
  • 1/2 cup chocolate chips (plus a few extra for sprinkling on top—because more chocolate is never a bad idea)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine almond butter and pumpkin puree until smooth.
  3. Add eggs, maple syrup (or honey), and vanilla extract; mix well.
  4. Sift in cocoa powder, baking soda, and salt; stir until just combined.
  5. Fold in chocolate chips.
  6. Pour batter into a lined or greased baking pan.
  7. Sprinkle extra chocolate chips on top.
  8. Bake for 20-25 minutes or until a toothpick comes out mostly clean.
  9. Allow to cool before slicing and serving.

Notes

Use natural nut butter without added sugar for the healthiest option. These brownies keep well refrigerated for up to 5 days.
