Ingredients

- 1 cup onions, diced
- 4 garlic cloves, minced
- 10 cups chicken broth
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 2 teaspoons salt
- 1 cup fresh spinach, chopped
- ¼ teaspoon pepper
- 24 ounces mini frozen wontons
- 2 cups uncooked noodles (soup, egg, or chow mein)
Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced onions and sauté until translucent.
- Stir in minced garlic and cook for 1 minute.
- Pour in chicken broth and bring to a boil.
- Add soy sauce, rice vinegar, salt, and pepper.
- Reduce heat and simmer for 5 minutes.
- Add mini frozen wontons and cook according to package instructions.
- Add uncooked noodles and simmer until tender.
- Stir in chopped spinach and cook until wilted.
- Serve hot and enjoy.
Notes
You can substitute spinach with bok choy or kale for variety.
