Effortless and juicy slow-cooked chicken tacos with all your favorite toppings — perfect for a hands-off weeknight win.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts (or thighs)
  • 1 cup salsa (any kind – try Trader Joe’s corn & chile)
  • 1 tsp cumin
  • ½ tsp garlic powder
  • Salt & pepper
  • Tortillas, to serve
  • Toppings: shredded cheese, avocado, lime wedges, sour cream, etc.

Instructions

  1. Add chicken, salsa, cumin, garlic powder, salt, and pepper to the slow cooker.
  2. Give it a little stir to combine.
  3. Cover and cook on low for 4–5 hours or high for 2–3 hours.
  4. Shred the chicken using two forks.
  5. Warm tortillas and fill with shredded chicken.
  6. Add your favorite toppings and serve.

Notes

Great for meal prep! Swap salsa flavors depending on your mood — smoky chipotle or tangy verde work great too.
