- 2 boneless, skinless chicken breasts (or thighs)
- 1 cup salsa (any kind – try Trader Joe’s corn & chile)
- 1 tsp cumin
- ½ tsp garlic powder
- Salt & pepper
- Tortillas, to serve
- Toppings: shredded cheese, avocado, lime wedges, sour cream, etc.
Instructions
- Add chicken, salsa, cumin, garlic powder, salt, and pepper to the slow cooker.
- Give it a little stir to combine.
- Cover and cook on low for 4–5 hours or high for 2–3 hours.
- Shred the chicken using two forks.
- Warm tortillas and fill with shredded chicken.
- Add your favorite toppings and serve.
