No-Bake Cranberry Pecan Praline Cookies

Description

Sweet, chewy, and nutty no-bake cookies made with oats, cranberries, and pecans coated in a praline glaze. Quick and easy to make!


Ingredients

  • 2 cups rolled oats
  • 1/2 cup dried cranberries
  • 1/2 cup pecans, chopped
  • 1 cup sugar
  • 1/2 cup unsalted butter
  • 1/4 cup heavy cream
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a saucepan over medium heat, combine sugar, butter, heavy cream, and salt. Stir until mixture comes to a boil.
  3. Boil for 2–3 minutes, stirring constantly, until thickened slightly.
  4. Remove from heat and stir in vanilla extract.
  5. In a large bowl, combine oats, cranberries, and pecans. Pour praline mixture over the top and mix well.
  6. Scoop spoonfuls of mixture onto prepared baking sheet. Let cookies set at room temperature (or refrigerate for faster setting).
  7. Enjoy once firm!

Notes

For extra flavor, toast the pecans before adding. Store cookies in an airtight container at room temperature for up to 5 days.
