A creamy and hearty chili made with tender chicken, white beans, and green chiles.
Ingredients

- 1 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 2 cups cooked shredded chicken
- 2 cans (15 oz) white beans, drained
- 2 cans (4 oz) diced green chiles
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp chili powder
- ½ tsp oregano
- ½ cup sour cream
- 1 cup shredded Monterey Jack cheese
- Salt & pepper to taste
Instructions
- Heat olive oil in a large pot. Add onion and garlic, sauté until fragrant.
- Add shredded chicken, beans, green chiles, broth, and spices. Simmer for 20 minutes.
- Stir in sour cream and cheese until creamy.
- Serve hot with tortilla chips, avocado, or jalapeños.
Notes
Can be made in a slow cooker. Freeze for up to 3 months. Mildly spiced but customizable with jalapeños or hot sauce.
