Ingredients

  • 23 medium zucchinis, chopped
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 tsp dried oregano
  • ½ tsp smoked paprika (or regular)
  • Salt and pepper to taste
  • A dash of crushed red pepper flakes (optional)
  • Olive oil or avocado oil for the skillet

Instructions

  1. Heat a drizzle of olive or avocado oil in a large skillet over medium heat.
  2. Add the diced onion and cook until soft, about 3–4 minutes.
  3. Stir in the garlic and cook for another 30 seconds until fragrant.
  4. Add the ground beef or turkey and cook until browned, breaking it up with a spoon as it cooks.
  5. Season with salt, pepper, oregano, smoked paprika, and red pepper flakes if using.
  6. Stir in the chopped zucchini and cook for about 5–7 minutes, until just tender.
  7. Pour in the can of diced tomatoes with their juices and stir well to combine.
  8. Simmer uncovered for 5–10 minutes until everything is heated through and slightly thickened.
  9. Taste and adjust seasonings as needed. Serve hot!
