These zucchini feta bites are a deliciously easy and flavorful appetizer or snack, perfect for summer days or party platters.


Ingredients

  • 1 medium zucchini (about 6 oz)
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon lemon zest
  • 1 tablespoon Italian seasoning
  • ¼ teaspoon garlic powder
  • ¼ teaspoon crushed red pepper (optional, but adds a lil’ kick)
  • 1 (5-ounce) block of feta cheese, cut into 16 cubes (roughly 1 inches)
  • Cooking spray (just a spritz!)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice zucchini into ¼-inch thick rounds.
  3. In a bowl, mix olive oil, lemon zest, Italian seasoning, garlic powder, and red pepper flakes.
  4. Brush zucchini slices with the mixture on both sides.
  5. Lightly coat a baking sheet with cooking spray.
  6. Place zucchini slices on the sheet and top each with a cube of feta.
  7. Spritz lightly with cooking spray.
  8. Bake for 12–15 minutes until zucchini is tender and feta is golden on top.
  9. Serve warm as a snack or appetizer!

For extra flavor, sprinkle with fresh herbs like basil or parsley before serving.
