Ingredients

- 1 medium zucchini (about 6 oz)
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon lemon zest
- 1 tablespoon Italian seasoning
- ¼ teaspoon garlic powder
- ¼ teaspoon crushed red pepper (optional, but adds a lil’ kick)
- 1 (5-ounce) block of feta cheese, cut into 16 cubes (roughly 1–1½ inches)
- Cooking spray (just a spritz!)
Instructions
- Preheat the oven to 400°F (200°C).
- Slice zucchini into ¼-inch thick rounds.
- In a bowl, mix olive oil, lemon zest, Italian seasoning, garlic powder, and red pepper flakes.
- Brush zucchini slices with the mixture on both sides.
- Lightly coat a baking sheet with cooking spray.
- Place zucchini slices on the sheet and top each with a cube of feta.
- Spritz lightly with cooking spray.
- Bake for 12–15 minutes until zucchini is tender and feta is golden on top.
- Serve warm as a snack or appetizer!
Notes
For extra flavor, sprinkle with fresh herbs like basil or parsley before serving.
